Ingredients of Satay Tofu

    • 1 (4 inch) lemongrass stalk
    • 1 small shallot or onion, peeled and chopped
    • 2 garlic cloves, minced
    • 1 piece fresh ginger, peeled
    • ¼ cup coconut milk
    • 3 tablespoons fresh lime juice
    • 2 tablespoons soy sauce
    • 2 tablespoons brown sugar
    • 1 teaspoon sambal oelek
    • ½ teaspoon ground cumin
    • 1 package tofu, drained, cut into cubes

How to Make Satay Tofu

  1. Cut a lengthwise down the lemongrass stalk, peel off the outer layer.
  2. Cut the inner stalk into pieces, then place them into the bowl of a food processor.
  3. Add the shallot, garlic, ginger, coconut milk, lime juice, soy sauce, brown sugar, sambal oelek and cumin to processor.
  4. Blend everything.
  5. Put the tofu into a dish, then pour the marinade over it.
  6. Put aside for least 30 minutes.
  7. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  8. Skewer the tofu cubes, placing pieces of tofu on each skewer.
  9. Arrange the tofu skewers on the baking sheet and bake for about 1 hour.
  10. Serve the tofu skewers with the peanut sauce.
