This vegetable tart might look a bit crazy but it’s actually easy to make! All you need is a vegetable peeler to get thin sliced of carrots, zucchini, and yellow summer squash.

Ingredients of Vegetable Tart

Filling

  • 1/2 cup cheese
  • 1 Tablespoon lemon juice
  • 1 teaspoon minced garlic
  • salt
  • pepper
  • 1 tsp fresh thyme leaves

Vegetables

  • 3 yellow squash
  • 3 zuccinni
  • 4 carrots
  • 1 1/2 tsp salt
  • 2 tsp fresh thyme leaves
  • 2 tbs olive oil

Shell

  • 1 1/3 cups all-purpose flour
  • 1/4 tsp salt
  • 1 egg
  • 1 tbsp lemon juice
  • 1 egg yolk
  • cold butter cut into 1 inch cubes

How to Make Vegetable Tart

  • Mix the cheese, lemon juice, garlic, salt and thyme in a small bowl for filling.

For Shell

  • Mix the egg and lemon juice in a bowl.
  • Add the flour, butter and egg mixture to a food processor and mix until if forms into a ball.
  • Place dough on a floured surface and knead well.
  • Form into a disk, wrap in plastic and chill for at least 30 minutes.
  • Roll out into same size circle.
  • Cover with parchment paper and bake about 20 minutes.
  • Remove paper and wrights and brush with beaten egg yolk.
  • Bake for 5 minutes longer. Allow to cool before applying filling.

Assembly

  • Slice the vegetables with a peeler and arrange on paper towels to absorb water.
  • Spread the cheese mixture.
  • Arrange the slices in a spiral.
  • Brush tart with olive oil.
  • Sprinkle salt and thyme.
  • Bake for about 1 hour.
