Baba ghanoush is a Levantine appetizer of mashed cooked eggplant which is mixed with tahini, olive oil, possibly lemon juice, and various seasonings.
Ingredients of Baba Ghanoush
- 2 medium eggplant
- ¼ cup tahini
- 3 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves
- ½ teaspoon sea salt
- Finely chopped parsley
- Pinch of smoked paprika
- Pinch of red pepper flakes
- Pita and veggies
How to Make Baba Ghanoush
Wrap the eggplant in foil and Roast the eggplant for 50 minutes in oven. When soft then Remove from the oven.
Once cool to the touch, peel the skin from eggplant, removing any big clumps of seeds. Place the flesh in a strainer over a bowl and remove excess water.
Place the eggplant flesh, tahini, lemon juice, olive oil, garlic, and salt into mixer grinder and make smooth paste. Transfer to a dish, decorate with chopped parsley, smoked paprika, and red pepper flakes.
Serve with pita and veggies.
