Basundi is an Indian sweet mostly in Maharashtra, Gujarat, Andhra Pradesh, Telangana, Tamil Nadu and Karnataka. It is a sweetened condensed milk made by boiling milk on low heat until the milk is reduced by half.

Ingredients of Basundi

  • 2 litre milk
  • 2 tbsp cashew, (chopped)
  • ½ cup sugar
  • 2 tbsp almonds, (chopped)
  • 2 tbsp pistachios, (chopped)
  • ¼ tsp saffron 
  • ¼ tsp cardamom powder

How To Make Basundi

  • Take a kadai and boil milk stirring occasionally.
  • Add chopped cashew, almonds and pistachios.
  • Stir continuously, so milk doesn’t stick to the bottom.
  • Boil the milk on low flame for 30 minutes.
  • Stirring in between to avoid sticking till the milk reduces to quarter.
  • Add sugar and saffron and mix well.
  • Add cardamom powder and mix well.
  • Serve basundi chilled or hot garnished with dry fruits.
