Sambharo Carrot Recipe – a simple Gujarati carrot salad recipe.

So other than the simplicity of this dish, what’s the difference between this and other carrot salads? even more when there is a multitude of carrot salad recipes ……

The difference lies in the way the salad is made, its taste and flavors. This is a sautéed salad where carrots are sautéed with mustard and green peppers. Green peppers add a little heat and spice to the salad. Taste is also enhanced by the flavors of fried mustard seeds.

The most of this recipe is the crunchiness of the carrots. They are cooked but not completely. And that’s what gives the dish a lot of texture and bite.

This is a warm carrot salad that is often served as a side dish with main meals and even with snacks like dhokla, fafda, and besan papdi (my international readers, excuse me. Other than dhokla, I don’t know how to translate Fafda and Besan papdi). I also make this salad with cabbage. Can also be made with raw papaya.

Remember when a Gujarati miThai store, a few miles from our home in Mumbai, served fafdas and papaya sambharo. So in the morning when we went for a walk most of the time I had the very hot fafdas and jalebis for breakfast in the morning.

Now, after burning so many calories while walking, I need some energy to burn the calories for the next day ;-). Nibbling on fafdas with sambharo papaya has always been a treat for me. Then have jalebi and ginger chai… Wah wah. I miss those days.

Sambharo can also be used as an accompaniment to dhokla. Usually I make sambharo and serve with dal-rice or sometimes pulao. You can also make sambharo with cabbage and carrots. Even green peppers can be added if you prefer. I avoid adding green pepper as I have picky eaters at home.

When I make sambharo with carrots or cabbage, I usually grate the carrots and grate the cabbage finely. It takes less time to cook them. We like to prefer it this way. However, you can finely chop carrots or cabbage.

We all know carrots are rich source of vitamin A. So this recipe is a good way to include carrots in your diet apart from the various great recipes that we make with them.

Ingredients

▢ 2 medium sized carrots – rinsed, peeled and grated
▢ 0.38 or 0.5 teaspoon mustard seeds
▢ 0.5 teaspoon sesame seeds – optional
▢ 1 to 1.5 teaspoon of oil
▢ 0.5 green chili, chopped
▢ 0.5 to 1 pinch of turmeric powder
▢ 0.5 pinch of asafoetida (hinge)
▢ a few drops of lemon juice or as needed
▢ salt as needed

Instructions

  1. Heat the oil. Splutter the mustard.
  2. Add the sesame seeds and brown for a few seconds.
  3. Add the chopped green pepper and brown for a few seconds.
  4. Sprinkle with turmeric powder and asafoetida and stir.
  5. Now add the grated carrots. Season with salt.
  6. Stir and sauté for 3-4 minutes over low heat.
  7. Carrots should be crunchy and crunchy and not fully cooked.
