Falafel is one of those dishes made in the Middle East region that would suit the Indian palate well. Falafel is made from chickpeas or chole peas with herbs like coriander and parsley and spices like cumin and chili powder. It can be served as a starter or garnished with vegetables in a pita bread.

Ingredients For Falafel

  • Chick peas (chole) – 1 cup
  • Onion – 1 cup
  • Garlic – 5 to 6 cloves
  • Parsley – 1/4 cup
  • Coriander leaves – 1/4 cup
  • Cumin powder – 1 tsp
  • Red chilli powder – 1 tsp
  • Salt to taste
  • Oil for frying

Directions

  1. Soak the chole overnight. Drain the water and mix with the onion, garlic, parsley, coriander leaves, cumin powder, chili powder, salt and coarsely grind in a food processor.
  2. Make small lemon balls with the mixture. Heat the oil in a pan and fry the balls until they are golden and crisp from the outside.
  3. Remove on paper towels to drain off excess oil.
  4. Serve hot.
