funfetti are totally easy to make right at home, all you need is a basic vanilla cupcake recipe and some rainbow sprinkles. I can see why the funfetti concept is so popular – who doesn’t love bright colors and sprinkles?! It’s so festive and fun and totally appropriate for any birthday party. Sprinkle fun!

Ingredients of Homemade Funfetti Cupcakes

Cupcakes

  • 1 and 2/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup yogurt (plain or vanilla; or greek yogurt; or sour cream)
  • 3/4 cup milk (cow’s milk; or soy milk; or almond milk)
  • 2 teaspoons vanilla extract
  • 1/2 cup rainbow jimmies/sprinkles

Vanilla Buttercream

  • 3/4 cup (170g) unsalted butter, softened to room temperature
  • 3 cups (360g) confectioners’ sugar
  • 1/4 cup (60ml) heavy cream or half-and-half*
  • 2 teaspoons vanilla extract
  • salt, to taste

Directions of Homemade Funfetti Cupcakes

  1. Preheat the oven to 350F degrees. Line a muffin pan with 12 cupcake pans. Put aside. In a bowl combine the flour, baking powder, baking soda and salt. Put aside.
  2. In a large bowl, melt the butter in the microwave. Stir in sugar – the mixture will be grainy. Refrigerate in the refrigerator for 1 minute.
  3. Stir in egg, yogurt, milk and vanilla extract until well blended. Slowly mix the dry ingredients together until there are no lumps.
  4. The dough will be thick. Slowly stir in the glitter, but do not mix too much, as the glitter will bleed in color. Divide the dough into 12 cupcakes (or 24 mini) and bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  5. Bake for 8 to 9 minutes if you are making mini cupcakes. Let cool. For the frosting: in a medium bowl, beat the softened butter at medium speed with an electric mixer or on a base equipped with a paddle.
  6. Beat for about 5 minutes and make smooth paste. Turn off the blender and add the sugar, cream and vanilla extract from the confectioners.
  7. Mix at low speed for 1 minute, then increase at high speed and beat for 3-4 full minutes.
  8. Add more powdered sugar if the frosting is too thin or more cream if the frosting is too thick.
  9. Add salt if the frosting is too sweet (I usually add 1/4 teaspoon). Gel-cooled cupcakes and garnish with sprinkles.
  10. Store cupcakes in an airtight container.
