Satisfying hungry children is a task in itself. Every day the food has to look interesting and of course different to satisfy their appetites! This recipe is a delicious chapati roll filled with a spicy mushroom mix. Adding bi-crab soda to the chapati batter makes these chapattis chewy while the cornmeal makes them crisp. A treat for children and adults alike! If you’re using leftover chapatis to make a tasty snack, heat them up a bit!

How to make a chili mushroom roll:

Makes 2 rolls.

Ingredients

For the rotis

  • 1 cup of plain flour (maida)
  • 1/2 tablespoon of cornstarch
  • 1/4 tablespoon of bi-carb soda
  • 1/2 tablespoon of butter
  • salt to taste

For the mushroom bhurji

  • 2 cups of mushrooms (khumbh), finely chopped
  • 3 garlic cloves, finely chopped
  • 1 teaspoon of grated ginger (adrak)
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tablespoons of coriander-cumin seed powder (dhania-jeera)
  • 2 teaspoons of pav bhaji masala
  • 3 teaspoons of dried fenugreek leaves (kasuri methi)
  • 1/4 cup tomato puree
  • 2 tablespoons of sour cream
  • a pinch of sugar
  • 1/4 cup chopped cilantro (dhania)
  • 1 tablespoon of oil
  • salt to taste

Method

For the rotis

  1. Sift together the flour, cornstarch, bi-carb soda and salt.
  2. Rub in the butter and make a soft dough using as much water as needed.
  3. Knead very well, cover with damp muslin and set aside for 1/2 hour.
  4. Knead again and divide into 4 portions.
  5. Roll each portion as thinly as possible. Cook lightly on a tava (hot plate) on both sides using a little ghee and set aside.

For the mushroom bhurji

  1. In a pan, heat the oil, add the garlic, ginger and onion. Sauté until the onion becomes translucent. Add the tomatoes and cook until the separation of oil.
  2. Add the coriander-cumin seed powder, kasuri methi and pav bhaji masala.
  3. Mix well, add the tomato puree and for a few more minutes cook it.
  4. Add the mushrooms and salt and mix well until the mushrooms are cooked.
  5. Add the cream, sugar and cilantro and mix well. Set aside.

The way to proceed

  1. Divide the filling into 4 portions.
  2. Distribute a portion of the filling evenly over each roti and roll it like a Swiss roll.
  3. Cut in 50 mm. (2 “) pieces and serve hot.
