Treasure of vitamins and minerals, spinach must be included in the menu of the week. The use can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with roasts, a few spinach leaves tossed with mixed vegetables and made into a soup is delicious on a cold night in the morning. In winter, chopped and blanched spinach makes it another kind of raita, spinach puree can be used in chops or kebabs, the list goes on.

Ingredients for the crackling spinach recipe
- Spinach 3 medium bunches
- Oil for frying
- Sesame oil (until oil) 1 tbsp
- Salt to taste
- Sugar 1 tbsp
- Red chili peppers, crushed 1 teaspoon
- Toasted sesame seeds (til) 1 teaspoon
Cut off the stem and use only the spinach leaves. Wash them under running water. Dries well. Stack them on top of each other, fold and finely shred.
Heat enough oil in a wok, add the grated spinach leaves and fry until crisp and dark green in color. Drain on paper towels.
Transfer to a serving platter. Sprinkle with salt, sugar, crushed red peppers and toasted sesame seeds and serve immediately.
