Italian cream cake is traditionally made with airy layers of vanilla cake with coconut and pecans baked in and frosted with cream cheese frosting.

Ingredients of Italian Cream Cake Cookies

Cookies

  • 1 Stick Butter
  • 3/4 Cup Sugar
  • 2 Large Eggs
  • 1 tsp. Vanilla
  • 1/4 tsp. Coconut Extract
  • 1 1/2 Cup All Purpose Flour
  • tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1/4 tsp. Cream of Tartar
  • 1/8 tsp. Salt
  • 1 Cup Sweetened Coconut flakes
  • 3/4 Cup Finely chopped Pecans 1/4 

Buttercream Glaze

  • 1 1/4 Cup Powder Sugar
  • 1 Tsp Melted Butter
  • 3 Tsp Milk
  • 1/4 Tsp Vanilla

Cream cheese glaze

  • 2 Oz Cream Cheese
  • 1 1/3 Cup Powder Sugar
  • 1-2 T Milk
  • 1/4 Tsp Vanilla

How to Make Italian Cream Cake Cookies

  • Mix flour, baking soda and salt in a bowl.
  • Mix your butter and sugar in mixer till light and fluffy. Add eggs and dry flour mixture.
  • Remove from mixer and fold in your coconut and pecans/walnuts. Allow to chill for at least 30 minutes.
  • Put cookies on non stick cookie sheet with spoon.
  • Place in the oven and cook for 10 minutes.
  • Allow to cool for 2 minutes on pan then a additional 2-3 minutes on cooling rack .
  • Glaze with wither a butter cream glaze.
  • For butter cream Glaze; Mix butter and sugar.
  • Mix in your extract then add 1 Tsp at a time of milk.
  • For Cream cheese Glaze; Cream the cream cheese and sugar together until mixed well, add your extract and 1 Tablespoon of milk.
