A traditional layered andhra cuisine sweet recipe prepared from maida or plain flour. The recipe is very similar or badusha with its texture but it is shaped as a tapeworm and dipped in sugar syrup before serving.

Ingredients of Khaja Recipe 

For the Dough:

  • 1 Cup Maida
  • 1/4 tsp Salt
  • 3 tbsp Ghee Clarified Butter

For Sugar Syrup:

  • 1 Cup Sugar
  • 1/2 Cup Water
  • 1/4 tsp Cardamom Powder
  • 1 tsp Lemon Juice

Other Ingredients:

  • 2 tbsp Corn Flour
  • Oil

How to make Khaja Recipe 

  1. Take maida and ghee in a bowl.
  2. Make a tight ball and hold intact.
  3. Add water gradually and knead to a smooth and soft dough.
  4. Rest the dough for 30 minutes.
  5. Dissolve 1 cup sugar in 1/2 water and boil until you get a single string consistency.
  6. Add cardamom powder and lemon juice.

Shaping Kaja:

  1. Dust the dough with maida and roll them.
  2. Start to roll tightly from one end.
  3. Seal the edges at the end brushing with some water.
  4. Roll the cylinder tight back and forth to remove any air gaps if present.
  5. Cut out the thin edges.
  6. Cut it into equal pieces and slightly flatten the edges of each kaja to for an oblong shape.
  7. Heat enough oil.
  8. Fry over medium low till they turn golden brown.
  9. Remove them and drop the them into the warm sugar syrup.
  10. Soak them for 5 minutes.
  11. Remove soaked kajas and place on a wire mesh to drain out excess syrup.
