It is an easy and quick condiment pickle recipe made with juicy limes with pickle masala. I would heavily recommend using fresh and juicy limes for this recipe. The skin has to be tender and also soft. The old lime would generally have hard skin and may not be able to cut or slice.

Ingredients of Lemon achar

  • 10 lime
  • 2 tsp mustard
  • ¼ tsp methi 
  • 3 tbsp kashmiri red chilli powder
  • ¼ tsp turmeric
  • 1 tbsp salt
  • ¼ cup oil
  • 1 tsp mustard
  • ¼ tsp hing 

How to Make Lemon achar

  • Take 4 cup water and get a boil.
  • Drop in 10 lime in boiling water.
  • cover and rest for 5 minutes.
  • Take off the lime from water and pat dry.
  • chop into quarter pieces and keep aside.I
  • In a pan dry roast mustard and methi on low flame.
  • Blend to a fine powder and add to chopped limes.
  • Add red chilli powder, turmeric and salt.
  • Heat oil and mustard, hing.
  • Once the oil cools completely, pour over the pickle and mix well.
  • finally, enjoy instant lime pickle or nimbu ka achar immediately.
