In the hot months of april and may, kulfi beats up hot summer. I am so excited to share today’s recipe because I really believe that I have finally found the perfect recipe for everyone’s favorite khoya kulfi! It’s malai kulfi, khoya is a great addition too. It makes the kulfi more grainy and gives it a nice texture.

Ingredients of Mawa Kulfi

  • 1 liter milk
  • 1/3 cup heavy cream
  • 3 tbs crumbled khoya
  • 1 tbs dried milk powder
  • 2 tbs finely chopped nuts
  • 5 tbs sugar
  • 8 green cardamom 

How to Make Mawa Kulfi

  • Add whole milk on medium heat in a pan.
  • Add heavy cream after 5 minutes.
  • When mixture come to a boil and then reduce the heat. Boil 30 minutes.
  • After about 30 minutes, when milk is quite thick, at this point add crumbled khoya and mix.
  • After khoya dissolves, add the sugar.
  • Add the crushed nuts.
  • Add milk powder and mix. Simmer for 5 more minutes.
  • Add cardamom powder after removing from heat.
  • Once the milk has cooled down, put into molds. Cover and freeze till 8 hours.
  • Enjoy the delicious malai kulfi!
