We have chosen a multi-textured combination of ingredients for this salad – capsicum for crunch and colour, baby corn for its tenderness, broccoli for its mealy texture, zucchini for its juiciness and mushroom for its chewiness.

1/2 cup thickly sliced mushrooms (khumbh)
1/2 cup broccoli florets
1/4 cup diagonally cut babycorn
1/2 cup sliced zucchini (unpeeled)
1 tsp olive oil
1/2 cup sliced onions
2 tsp chopped garlic (lehsun)
1 cup coloured capsicum (green , yellow and red) , cut into thin strips
2 cups iceberg lettuce , torn into pieces
salt to taste

To Be Mixed Into A Honey Orange Dressing
2 tsp honey
1 tbsp readymade orange juice
1 tbsp chopped basil leaves
1/2 tsp dried oregano
1 tbsp olive oil
1/2 tbsp lemon juice
salt and freshly ground black pepper (kalimirch) to taste


  1. Heat the oil in a broad non-stick pan, add the onions and garlic and sauté on a medium flame for 1 minute.
  2. Add all the remaining ingredients, except the lettuce, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  3. Transfer in a deep bowl, cool completely, add the lettuce and the prepared honey orange dressing and toss well.
  4. Serve immediately.
