One Pot Mexicali Bowtie Pasta, an easy recipe for a busy weeknight dinner that cooks in just minutes in one pot, and is bursting with corn, black beans, pasta and cheesiness! 8 ounces uncooked bowtie pasta
1 jar (16 oz) salsa
3 cups water
1 can (10.5 oz. can) black beans, drained and rinsed
1 8.5 oz. can corn kernels, drained
4 Tbs. butter
2 tsp. chili powder**
1 tsp. ground cumin
1 tsp. kosher salt
1 cup shredded 4 cheese Mexican blend cheese
1 scallion, sliced
- In pot with deep sides, preferably a non-stick pot, combine pasta, salsa, water, beans, corn, butter, chili powder, cumin and kosher salt.
- Bring to a boil over medium-high heat.
- Boil 10 minutes or until pasta is al dente and a brothy sauce has formed, stirring occasionally.
- Top with shredded cheese and sliced scallion.
