Pad Thai: A very pleasing presentation of soft noodles and bean curd combined with fresh vegetables and crunchy peanuts.

Makes 4 servings


4 tbsp oil
1 tsp finely chopped garlic (lehsun)
1/2 cup finely chopped spring onions whites
1 cup bean sprouts
2 cups boiled noodles
1 cup fried tofu (bean curd/ soya paneer)
2 tbsp roasted peanuts ,
3/4 tsp chilli powder
2 tsp sugar
2 tbsp soy sauce
1 tbsp lemon juice
2 tbsp chopped coriander (dhania)
finely chopped spring onion greens
salt to taste

Method To Make Pad Thai

  1. Heat the oil in a wok, add the garlic and spring onion whites.
  2. Add the bean sprouts and stir-fry for a couple of minutes.
  3. Add the noodles, tofu, peanuts, chilli powder, sugar, soya sauce, lemon juice, coriander, spring onion greens and salt. Mix well and stir-fry for 3 to 4 minutes.
  4. Pad Thai is ready. Serve immediately.
