Papdi chaat is a popular North Indian street food snack filled with a variety of mouth-watering textures and flavors. Papri Chaat includes chickpeas, potatoes, various chutneys, yogurt, papdi, curd, sev and is garnished with coriander.

Ingredients

  • 1 cup whole wheat flour
  • 1 cup maida
  • 1 teaspoon cumin seeds
  • 1 teaspoon ajwain
  • 2 tablespoon ghee
  • 6 tablespoon water
  • salt 
  • oil for deep frying
  • 3 tbsp potato (boiled & chopped)
  • 3 tbsp chickpea (boiled)
  • 3 tbsp onion (finely chopped)
  • 5 tbsp curd (whisked)
  • 3 tsp green chutney
  • 3 tsp tamarind chutney
  • pinch chilli powder
  • pinch cumin powder
  • pinch chaat masala
  • pinch salt
  • 1 tbsp tomato (finely chopped)
  • 3 tbsp sev
  • 1 tsp coriander (finely chopped)

How to Make Papdi

  • Mix the atta, maida, ajwain, cumin seeds and salt in a large mixing bowl.
  • Rub ghee in the dough with your finger tips, till you get a bread crumb like consistency in the mixture.
  • Add water and knead to a firm dough. Keep covered for 30 minutes.
  • Knead again and divide the dough into 4 equal balls.
  • Roll each dough ball thin with belan.
  • Using a cookie cutter, cut round or different shapes from the rolled dough.
  • Prick the cut out papdis or small pooris with fork, so that they don’t puff while frying and become crisp.
  • Heat oil for deep frying in a kadai.
  • Slid the papdi in hot oil and with the help of a slotted spoon, fry them till golden.
  • Drain the papdi on paper towels to remove excess oil.

How to Make Chaat

  • firstly, in a serving plate take some papdies.
  • Top with potato and chickpea.
  • Also, sprinkle chopped onions.
  • Take whisked curd and drizzle over it.
  • further, add green chutney and tamarind chutney.
  • Sprinkle chilli powder, cumin powder, chaat masala and salt.
  • Add 1 tbsp onion and 1 tbsp tomato.
  • Add more curd, green chutney and tamarind chutney.
  • Top with sev and garnish with coriander.
  • finally, enjoy dahi papdi chaat.
