Ingredients for 4 servings

2 tablespoons of olive oil
½ medium onion, finely diced
½ teaspoon of red pepper flakes
1 garlic clove, minced
14 oz chopped tomato (395 g), 1 can
salt to taste
½ lb of penne pasta (225 g)

Preparation

  1. Heat a large sauté pan over medium heat. Add olive oil and onion and cook until onion is translucent, 8 to 10 minutes.
  2. Add the chili flakes and garlic and cook for another 2 minutes, until fragrant. Stir in the tomatoes and for 20 minutes, simmer, uncovered.
  3. Bring a boil to a large pot of salted water. Cook pasta according to package directions. Retain ½ cup (120 mL) of the pasta water, then drain.
  4. Add the drained pasta to the sauce. Stir well, adding a little pasta water if necessary to loosen the sauce. Season with salt to taste.
  5. Enjoy!
