In north India no wedding or party is complete until you have chole masala on the menu.
Ingredients of Punjabi Chole Masala
- • 2 tbsp cumin seeds
• 1 tbsp caraway seeds
• 5 dry red chillies
• 1 tsp turmeric
• 1 tbsp coriander seeds
• 1/2 tbsp black peppercorns
• 10 cloves
• 1 tbsp white sesame seeds
• 10 green cardamoms
• 4 black cardamoms
• 1/2 tbsp dry ginger
• 1 tbsp dry mango powder
• 5 sticks of cinnamon
• 2 bay leaves
• 1 star anise
• 1/2 tsp grated nutmeg
• 1/2 tbsp rock salt
How To Make Punjabi Chole Masala
• Dry roast all the ingredients one by one and allow them to cool.
• Once the ingredients have cooled, grind them to a smooth powder in the mixer.
• Sieve the powder, and store it in an air tight container.
