Rainbow Dahi Shots – a festive twist of classic Indian comfort and street food, this version of panipuri, soaked in yogurt-based pani and filled with tangy masala is the perfect blend of colors and flavors!

Ingredients

  • 50 Pani Puri

Beetroot shot

  • 1 cup of yogurt
  • 1 cup of water
  • 1 teaspoon of ginger
  • 1/2 teaspoon green peppers
  • 2 teaspoons of mint
  • 3 teaspoons of grated beetroot
  • 1/2 teaspoon ground cumin
  • 1 teaspoon of sugar
  • salt to taste

Mint shot

  • 1 cup of yogurt
  • 1 cup of water
  • 2 tablespoons of coriander
  • 2 tablespoons of mint
  • 1/2 teaspoon ground cumin
  • salt to taste
  • 1 teaspoon of sugar

Turmeric shot

  • 1 cup of yogurt
  • 1 cup of water
  • 2 teaspoons of mint
  • 1/2 teaspoon ground cumin
  • 1 teaspoon of sugar
  • salt to taste

Turmeric Temper

  • 1 teaspoon of oil
  • 8 curry leaves, torn
  • 2 dried red peppers
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon of turmeric powder

Filling

  • 1 cup of black gram, boiled
  • 1/2 cup finely chopped boiled potatoes
  • 1/4 cup tomatoes, seeded and finely chopped
  • 1/4 cup onion, finely chopped
  • 1/4 cup pomegranate seeds
  • 1 teaspoon green peppers, finely chopped
  • 3 tablespoons of chopped cilantro
  • 3 tablespoons of tamarind chutney
  • 1 teaspoon of chaat masala
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon red chilli powder
  • salt to taste

Garnish

  • sev (bhujiya)
  • pomegranate seeds
  • tamarind chutney

Instructions

  1. For the beetroot shot, combine all the ingredients and set aside in another bowl.
  2. For the mint kick, combine all the ingredients and set aside in another bowl.
  3. For the turmeric, combine the yogurt, water, mint leaves, cumin powder, sugar and salt.
  4. In a small saucepan, add the oil and add the mustard seeds, dried peppers and curry leaves when the oil is hot. Sauté them and add the turmeric powder. Immediately add the turmeric mixture and keep it aside.
  5. For the garnish, combine all the ingredients and adjust the seasoning to taste.
  6. To assemble, make a hole in the center of the puri with your thumb and insert the filling inside. Add your favorite hit with toppings like sev, pomegranate seeds and tamarind chutney. Enjoy!
