Rajgira puri is a fried, puffed bread that is made from rajgira flour and consumed during Hindu fasting like Navratri vrat, Ekadashi, Gauri vrat, Jaya Parvati vrat, janmashtami etc.

Ingredients of Rajgira poori

  • 1 cup Boiled
  • 1 cup Rajgira Atta 
  • 1 teaspoon Ginger paste
  • 1 teaspoon Green chili paste
  • Salt to taste
  • ¼ cup Cilantro
  • 1 teaspoon Cumin seeds
  • Oil for frying

How to Make Rajgira poori

  • Take Rajgira flour, mashed potatoes, salt, cumin seeds, ginger-chili paste, and cilantro in a bowl.
  • Mix well and knead into dough.
  • Rest for 15 minutes.
  • Make small balls.
  • Cut the plastic bag. Grease it with little bit oil.
  • Place each ball on a plastic sheet and gently roll into a puri.
  • Deep fry one by one in hot oil, until puffed up and golden.
  • Serve Rajgira Aloo Puri with Curd or aaloo sabji.
