It is made with red meat—traditionally lamb, mutton, or goat—and coloured and flavoured primarily by alkanet flower and Kashmiri chilies. It is one of the signature recipes of Kashmiri cuisine.

Ingredients of Rogan Josh

  • 3.5 tbsp ghee
  • 1 cinnamon stick
  • 6 green cardamom pods
  • 4 cloves
  • 1 large onion , chopped
  • 3 cloves garlic , minced
  • 1 tbsp ginger , grated
  • 5 tbsp tomato passata
  • 1 tsp salt
  • 750g boneless lamb shoulder , cut into 3cm/1.2″ cubes 
  • 1.5 cups chicken stock
  • 2 tbsp paprika
  • 3/4 tsp chilli powder
  • 4 tsp ground coriander
  • 4 tsp ground cumin
  • 2 tsp turmeric powder
  • 1/4 tsp nutmeg
  • 1 tsp garam marsala
  • 1/2 tsp fennel powder

How to Make Rogan Josh

  • Melt ghee in large pot.
  • Add cinnamon, cardamom and cloves and cook.
  • Add onion and cook for 10 minutes.
  • Add the garlic and ginger.
  • Stir in the Spices.
  • Mix in the tomato puree and salt, then add stock and mix.
  • Add lamb, stir, bring to simmer.
  • Place lid on and adjust heat to low.
  • Cook 1 hour 45 minutes.
  • Remove lid, and continue cooking for another 15 minutes.
  • Stir in the Yogurt, the garam marsala and fennel. Cook for 5 minutes.
