There is probably no other culinary delight that is as ubiquitous on the tables of Iftar through the GCC during Ramadan, than Samboosa cheese. Although Samoosa is not an authentic Arabian snack, it is one that has been widely adopted in India also.

For the potato filling

  • 1 medium potato, peeled and mashed
  • 1 small onion, finely chopped
  • 1 clove garlic, crushed
  • ½ cup peas and carrots (frozen will do)
  • 1 tsp cumin powder
  • 1 tsp ground coriander
  • 2 tsp organic coconut oil
  • ¼ tsp turmeric powder
  • ½-1 tsp curry powder
  • Sea salt and black pepper to taste

For the cheese filling

  • 1 3oz serving of firm tofu
  • 2 tbsp of tofutti cream cheese
  • 1 tbsp nutritional yeast
  • 2 tbsp finely chopped parsley
  • 1 tsp extra virgin olive oil
  • 1 tsp lemon juice
  • Sea salt and black pepper to taste
  • 4 sheets of rice paper

Instructions Of Vegan Cheese Samboosa

  1. Start by preparing the garnish – in coconut oil over medium heat before adding the cumin, coriander and curry powder with the onion.
  2. Sauté until translucent before adding peas and carrots. Stir over medium heat for a few minutes before adding the mashed potato to the turmeric.
  3. Mix well and season with salt and black pepper as desired. For the cheese filling, mix all the ingredients in a shallow bowl and mix until well blended.
  4. Set aside the filling to cool and prepare the rice paper sheets – you will need a large, shallow tray with warm water. Soak each leaf in water on each side for a few seconds before transferring it to a cutting board.
